- Warm honey gently and steep lavender for 5 minutes. Strain and cool completely.
- Mix graham cracker crumbs, butter, and honey. Press into springform pan and chill.
- Beat cream cheese until smooth. Add infused honey, vanilla, and lemon zest.
- Whip heavy cream to stiff peaks and fold into cream cheese mixture.
- Spread filling over crust and refrigerate at least 6 hours until set.

Use culinary-grade lavender only for best flavor.
