Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter melted
  • 2 tbsp honey
Filling
  • 16 oz cream cheese softened
  • 0.75 cup heavy whipping cream cold
  • 0.5 cup honey
  • 1 tbsp dried culinary lavender
  • 1 tsp vanilla extract
  • 1 tsp lemon zest

Method
 

  1. Warm honey gently and steep lavender for 5 minutes. Strain and cool completely.
  2. Mix graham cracker crumbs, butter, and honey. Press into springform pan and chill.
  3. Beat cream cheese until smooth. Add infused honey, vanilla, and lemon zest.
  4. Whip heavy cream to stiff peaks and fold into cream cheese mixture.
  5. Spread filling over crust and refrigerate at least 6 hours until set.

Use culinary-grade lavender only for best flavor.
