One Pan Bold Honey BBQ Chicken Rice

  • 1.5 lbs boneless chicken breast or thighs cut into cubes
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1.5 cups long-grain white rice uncooked
  • 1 cup BBQ sauce bold or smoky
  • 3 tbsp honey
  • 3 cups chicken broth
  • 3 cloves garlic minced
  • 1 tsp smoked paprika
  • 0.5 tsp chili flakes optional
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp parsley chopped, for garnish

Method
 

  1. Heat olive oil and butter in a large deep skillet over medium heat. Add chicken and season with salt, pepper, and smoked paprika. Sear until lightly browned.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Stir in the uncooked rice, coating it in the chicken drippings.
  4. Pour in chicken broth, BBQ sauce, honey, and chili flakes. Stir well to combine.
  5. Cover the skillet with a lid and simmer for 18–22 minutes until rice is cooked and liquid has been absorbed.
  6. Turn off heat and let rest for 5 minutes. Fluff with a fork.
  7. Garnish with parsley and drizzle extra BBQ sauce before serving.

Notes

For extra smokiness, add chipotle powder or smoked sea salt.
