- Heat olive oil in a large pot over medium-high heat. Add sliced chicken and half the fajita seasoning. Cook 5–6 minutes until browned.
- Add sliced bell peppers, onion, and garlic. Sauté 4–5 minutes until softened.
- Pour in chicken broth and add the pasta. Stir and bring to a boil.
- Cover and cook on medium heat 12–14 minutes, stirring occasionally, until pasta is tender.
- Stir in heavy cream and remaining fajita seasoning.
- Add shredded cheese and stir until sauce becomes creamy.
- Mix in lime juice and chopped cilantro before serving.
Notes
Use more broth if needed for saucier pasta. Add jalapeños for heat or cream cheese for extra creaminess.
