One Pot Chicken Fajita Pasta

  • 1 lb chicken breast thinly sliced
  • 1 tbsp olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 1 onion sliced
  • 3 cloves garlic minced
  • 2 tbsp fajita seasoning
  • 12 oz pasta penne or rotini
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded Mexican cheese blend
  • 1 tbsp lime juice
  • 0.25 cup cilantro chopped

Method
 

  1. Heat olive oil in a large pot over medium-high heat. Add sliced chicken and half the fajita seasoning. Cook 5–6 minutes until browned.
  2. Add sliced bell peppers, onion, and garlic. Sauté 4–5 minutes until softened.
  3. Pour in chicken broth and add the pasta. Stir and bring to a boil.
  4. Cover and cook on medium heat 12–14 minutes, stirring occasionally, until pasta is tender.
  5. Stir in heavy cream and remaining fajita seasoning.
  6. Add shredded cheese and stir until sauce becomes creamy.
  7. Mix in lime juice and chopped cilantro before serving.

Notes

Use more broth if needed for saucier pasta. Add jalapeños for heat or cream cheese for extra creaminess.
