One Pot Cowboy Spaghetti

Ingredients
  

  • 1 lb ground beef
  • 8 oz spaghetti noodles broken in half
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 1 can tomato sauce 15 oz
  • 1 can kidney beans drained
  • 1 cup corn kernels
  • 2.5 cups beef broth
  • 1 tsp chili powder
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 1 cup shredded cheddar cheese

Equipment

  • Large pot or deep skillet
  • Wooden spoon
  • Knife and cutting board

Method
 

  1. Brown ground beef in a large pot over medium heat.
  2. Add onion and garlic; cook until softened.
  3. Stir in tomatoes, sauce, beans, corn, broth, and spices.
  4. Add spaghetti and press into liquid.
  5. Simmer covered until pasta is tender.
  6. Top with cheese and allow to melt before serving.

Notes

Add extra broth if pasta absorbs liquid too quickly.
