Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground beef or Italian sausage
  • 1 onion diced
  • 4 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 0.5 tsp dried oregano
  • 0.5 tsp red pepper flakes optional
  • 28 oz crushed tomatoes
  • 14 oz diced tomatoes
  • 4 cups chicken or beef broth
  • 8 lasagna noodles broken

Equipment

  • Large pot or Dutch oven
  • Wooden spoon

Method
 

  1. Brown ground meat in olive oil in a large pot.
  2. Add onion and garlic; cook until softened.
  3. Stir in tomato paste and seasonings.
  4. Add tomatoes and broth; bring to a simmer.
  5. Add broken lasagna noodles and cook until tender.
  6. Season to taste and serve with cheese.

Notes

Soup thickens as it rests; add broth when reheating.
