Ingredients
  

Soup
  • 1 lb Italian sausage
  • 1 onion finely diced
  • 4 cloves garlic minced
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 can diced tomatoes 14 oz or 1/2 cup sun-dried tomatoes
  • 1 lb gnocchi potato
  • 3 cups spinach fresh
  • 0.25 cup parmesan grated
  • salt and pepper to taste

Method
 

  1. Brown sausage in a large pot, breaking it apart.
  2. Add onion and cook until soft.
  3. Stir in garlic, Italian seasoning, and paprika.
  4. Pour in chicken broth and tomatoes; bring to a simmer.
  5. Add gnocchi and cook until tender.
  6. Stir in cream, parmesan, and spinach until wilted.
  7. Simmer 2 minutes, season to taste, and serve.

Notes

Use both diced tomatoes and sun-dried tomatoes for deeper Tuscan flavor.
