Ingredients
  

Muffins
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 2 eggs large
  • 0.5 cup plain yogurt or sour cream
  • 0.33 cup orange juice freshly squeezed
  • 1 tbsp orange zest
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries diced
Streusel Topping
  • 0.33 cup all-purpose flour
  • 0.25 cup brown sugar
  • 2 tbsp granulated sugar
  • 3 tbsp unsalted butter cold and cubed
  • 1 pinch salt

Method
 

  1. Preheat oven to 375°F (190°C) and line a muffin tin with liners.
  2. Prepare streusel by combining flour, sugars, and salt, then cutting in butter until crumbly. Chill.
  3. Whisk flour, baking powder, baking soda, and salt together.
  4. Cream butter and sugar until fluffy. Beat in eggs, then add yogurt, orange juice, zest, and vanilla.
  5. Mix in dry ingredients until just combined. Fold in strawberries.
  6. Divide batter into muffin cups and top with streusel.
  7. Bake 18–22 minutes until golden and a toothpick comes out clean. Cool and serve.

Notes

For extra crunch, sprinkle a little turbinado sugar over the streusel before baking.
