Ingredients
  

Nachos Base
  • 1 bag tortilla chips thick, restaurant-style
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup black beans rinsed and drained
  • 1 cup bell peppers diced assorted colors
  • 1 medium tomato diced
  • 1 small red onion finely chopped
  • 1-2 jalapeños sliced
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • salt and pepper to taste
  • 2 tbsp olive oil

Equipment

  • Baking sheet
  • Mixing bowls
  • Knife and cutting board
  • Parchment paper

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss diced vegetables in olive oil, chili powder, smoked paprika, salt, and pepper.
  3. Layer half the tortilla chips on the sheet, then add half the cheese, beans, and veggies. Repeat layers.
  4. Bake for 8–10 minutes until cheese is melted and bubbly.
  5. Remove from oven, top with fresh jalapeños, diced tomatoes, and cilantro. Serve with guacamole, salsa, and sour cream.

Notes

For extra crispiness, pre-toast chips in the oven for 3 minutes before layering toppings.
