Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss diced vegetables in olive oil, chili powder, smoked paprika, salt, and pepper.
- Layer half the tortilla chips on the sheet, then add half the cheese, beans, and veggies. Repeat layers.
- Bake for 8–10 minutes until cheese is melted and bubbly.
- Remove from oven, top with fresh jalapeños, diced tomatoes, and cilantro. Serve with guacamole, salsa, and sour cream.
Notes
For extra crispiness, pre-toast chips in the oven for 3 minutes before layering toppings.
