Casserole Ingredients
  • 1 pound breakfast sausage cooked and crumbled
  • 2 cups all-purpose pancake mix
  • 1.5 cups milk
  • 2 large eggs
  • 0.5 cup shredded cheddar cheese plus extra for topping
  • 2 tbsp melted butter
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • chopped green onions or herbs optional garnish

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Cook sausage in a skillet over medium heat until browned and fully cooked. Drain and set aside.
  3. In a mixing bowl, whisk together pancake mix, milk, eggs, melted butter, salt, and pepper until smooth.
  4. Spread half the batter in the prepared dish. Layer cooked sausage and half the shredded cheese. Pour remaining batter on top and sprinkle remaining cheese.
  5. Bake for 30–35 minutes until golden and a toothpick comes out clean.
  6. Cool 5–10 minutes before slicing. Garnish with green onions or herbs if desired.

Notes

Assemble the night before for a make-ahead breakfast. Add vegetables or spicy sausage for variation.
