Method
- Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- Cook sausage in a skillet over medium heat until browned and fully cooked. Drain and set aside.
- In a mixing bowl, whisk together pancake mix, milk, eggs, melted butter, salt, and pepper until smooth.
- Spread half the batter in the prepared dish. Layer cooked sausage and half the shredded cheese. Pour remaining batter on top and sprinkle remaining cheese.
- Bake for 30–35 minutes until golden and a toothpick comes out clean.
- Cool 5–10 minutes before slicing. Garnish with green onions or herbs if desired.
Notes
Assemble the night before for a make-ahead breakfast. Add vegetables or spicy sausage for variation.
