- Preheat oven to 400°F (200°C). Lightly grease or line a baking dish with parchment paper.
- Whisk olive oil, lemon juice, lemon zest, Dijon mustard, garlic, parsley, salt, pepper, and honey in a bowl.
- Pat salmon fillets dry, place in baking dish, and season lightly with salt and pepper.
- Pour marinade over salmon, coating the tops evenly.
- Bake for 12–15 minutes, until salmon flakes with a fork.
- Optional: broil for 1–2 minutes for a golden finish.
- Garnish with lemon slices and parsley. Serve warm.
