Method
- Place extra coconut in a shallow dish for coating.
- In a large bowl, mix rolled oats, 1 cup coconut, cocoa powder, and salt.
- In a saucepan, melt butter over medium heat. Add brown sugar and milk and bring to a gentle simmer for 3 minutes.
- Remove from heat and stir in vanilla extract.
- Pour chocolate sauce over oat mixture and stir until fully combined.
- Let the mixture cool for 10–15 minutes.
- Shape into balls using a spoon or scoop.
- Roll each ball in shredded coconut to coat.
- Refrigerate for 30 minutes before serving.
Notes
For firmer snowballs, add extra oats. For softer, add a splash more milk.
