Peri Peri Chicken and Rice

Ingredients
  

Chicken Marinade
  • 2 lbs chicken thighs or drumsticks
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 2 tbsp lemon juice
  • 2 tsp paprika
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 0.5 tsp cayenne pepper
  • 1 tsp oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
Rice
  • 1.5 cups long-grain rice
  • 2 tbsp olive oil or butter
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2.5 cups chicken broth
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

Method
 

  1. Whisk olive oil, garlic, lemon juice, paprika, smoked paprika, chili powder, cayenne, oregano, salt, and pepper.
  2. Coat chicken with marinade and refrigerate for at least 2 hours.
  3. Preheat oven to 400°F (200°C).
  4. Bake chicken 30–35 minutes until cooked through.
  5. Heat oil in a saucepan and sauté onion until soft.
  6. Add garlic and cook 1 minute.
  7. Stir in rice and toast briefly.
  8. Add broth, paprika, salt, and pepper. Simmer 15 minutes until rice is tender.
  9. Serve chicken over rice and garnish with parsley and lemon.

Notes

Adjust spice level by increasing or reducing cayenne pepper.
