Method
- Whisk olive oil, garlic, lemon juice, paprika, smoked paprika, chili powder, cayenne, oregano, salt, and pepper.
- Coat chicken with marinade and refrigerate for at least 2 hours.
- Preheat oven to 400°F (200°C).
- Bake chicken 30–35 minutes until cooked through.
- Heat oil in a saucepan and sauté onion until soft.
- Add garlic and cook 1 minute.
- Stir in rice and toast briefly.
- Add broth, paprika, salt, and pepper. Simmer 15 minutes until rice is tender.
- Serve chicken over rice and garnish with parsley and lemon.
Notes
Adjust spice level by increasing or reducing cayenne pepper.
