Ingredients
  

Sandwich
  • 4 slices sourdough bread
  • 4 slices mozzarella cheese
  • 4 tbsp basil pesto
  • 2 tbsp unsalted butter softened
  • 2 tbsp Parmesan cheese optional

Equipment

  • Skillet
  • Spatula
  • Knife
  • Cutting board

Method
 

  1. Butter one side of each bread slice.
  2. Spread pesto on unbuttered sides and add mozzarella.
  3. Assemble sandwich with buttered sides facing outward.
  4. Cook in skillet over medium heat 3–4 minutes per side until golden and melted.
  5. Slice and serve immediately.

Notes

For extra crispiness, sprinkle Parmesan on buttered sides before cooking.
