Method
- Toss diced chicken with spices until evenly coated.
- Cook chicken in olive oil over medium heat 5–7 minutes until done. Add pineapple for last 2 minutes.
- Warm tortillas in skillet or oven.
- Assemble tacos with chicken, pineapple, cabbage, bell peppers, and cilantro.
- Optional: drizzle Greek yogurt sauce over tacos.
- Serve immediately with lime wedges.
