Ingredients
  

Chicken Filling
  • 1 lb chicken breast diced
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 0.25 tsp black pepper
  • 0.5 tsp salt
  • 1 tbsp olive oil
  • 0.5 cup pineapple chunks fresh
Taco Assembly
  • 8 corn tortillas
  • 1 cup shredded red cabbage
  • 0.25 cup red bell pepper diced
  • 0.25 cup yellow bell pepper diced
  • 2 tbsp fresh cilantro chopped
  • 1 lime cut into wedges
Optional Sauce
  • 0.25 cup Greek yogurt
  • 1 tsp lime juice
  • salt and pepper to taste

Method
 

  1. Toss diced chicken with spices until evenly coated.
  2. Cook chicken in olive oil over medium heat 5–7 minutes until done. Add pineapple for last 2 minutes.
  3. Warm tortillas in skillet or oven.
  4. Assemble tacos with chicken, pineapple, cabbage, bell peppers, and cilantro.
  5. Optional: drizzle Greek yogurt sauce over tacos.
  6. Serve immediately with lime wedges.

Notes

Store cooked chicken up to 3 days. Assemble tacos fresh for best texture.
