Ingredients
  

Main
  • 3 cups cooked jasmine rice preferably day-old
  • 1.5 cups pineapple chunks fresh or canned, drained
  • 2 tbsp vegetable oil
  • 3 cloves garlic minced
  • 1 small onion finely chopped
  • 1 cup mixed vegetables
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce optional
  • 1 tsp chili flakes adjust to taste
  • 1 tbsp brown sugar or honey
  • 2 green onions sliced
  • 1 tbsp lime juice
  • salt and black pepper to taste

Equipment

  • Wok or large skillet

Method
 

  1. Heat oil in a wok or large skillet over medium-high heat.
  2. Sauté onion for 2–3 minutes until softened, then add garlic and cook until fragrant.
  3. Add mixed vegetables and stir-fry until tender-crisp.
  4. Add cooked rice and break apart clumps while stir-frying.
  5. Stir in pineapple chunks and cook for 2 minutes.
  6. Add soy sauce, oyster sauce, chili flakes, and brown sugar, mixing thoroughly.
  7. Cook for another 2–3 minutes until flavors are well combined.
  8. Finish with lime juice, green onions, salt, and pepper, then serve warm.

Notes

Use day-old rice for the best texture and avoid overcooking the pineapple to maintain its juicy bite.
