- Heat oil in a wok or large skillet over medium-high heat.
- Sauté onion for 2–3 minutes until softened, then add garlic and cook until fragrant.
- Add mixed vegetables and stir-fry until tender-crisp.
- Add cooked rice and break apart clumps while stir-frying.
- Stir in pineapple chunks and cook for 2 minutes.
- Add soy sauce, oyster sauce, chili flakes, and brown sugar, mixing thoroughly.
- Cook for another 2–3 minutes until flavors are well combined.
- Finish with lime juice, green onions, salt, and pepper, then serve warm.
Notes
Use day-old rice for the best texture and avoid overcooking the pineapple to maintain its juicy bite.
