Ingredients
  

Cake
  • 1.5 cups all-purpose flour
  • 1 cup pistachios finely ground
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 3 eggs large
  • 1 tsp vanilla extract
  • 0.75 cup milk
Frosting
  • 8 oz mascarpone cheese cold
  • 1 cup heavy cream cold
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract

Equipment

  • Mixing bowls
  • Hand mixer or stand mixer
  • Cake pans
  • Wire rack

Method
 

  1. Preheat oven to 350°F (175°C) and prepare cake pans.
  2. Whisk dry ingredients including ground pistachios.
  3. Cream butter and sugar, then add eggs and vanilla.
  4. Alternate adding dry ingredients and milk.
  5. Bake until set and cool completely.
  6. Whip mascarpone frosting ingredients until smooth.
  7. Assemble cake and frost.

Notes

Chill cake before slicing for best presentation.
