- Season pork tenderloin evenly with salt and pepper.
- Heat olive oil in a skillet and sear pork on all sides until golden.
- Lower heat, cover, and cook until pork reaches 145°F internally.
- Remove pork and let rest before slicing.
- Melt butter in skillet, sauté shallot and garlic.
- Deglaze with chicken broth and simmer.
- Stir in cream, Dijon mustard, and thyme; simmer until thickened.
- Slice pork and serve with sauce spooned over top.
