Ingredients
  

Doughnuts
  • 1 cup almond flour
  • 0.5 cup oat flour or ground rolled oats
  • 0.25 cup vanilla protein powder
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • 0.25 tsp baking soda
  • 0.25 tsp salt
  • 2 eggs large
  • 0.5 cup Greek yogurt plain
  • 0.25 cup unsweetened applesauce
  • 2 tbsp coconut oil melted
  • 2 tsp vanilla extract
  • 0.5 cup fresh or frozen berries

Method
 

  1. Preheat oven to 350°F (175°C). Grease a doughnut pan.
  2. Whisk together almond flour, oat flour, protein powder, cinnamon, baking powder, baking soda, and salt.
  3. In a separate bowl, mix eggs, Greek yogurt, applesauce, melted coconut oil, and vanilla extract.
  4. Fold wet ingredients into dry ingredients. Gently fold in berries.
  5. Spoon batter into pan, filling 3/4 full. Bake 18–22 minutes until a toothpick comes out clean.
  6. Cool in pan 5 minutes, then transfer to wire rack. Optional: drizzle with glaze and top with extra berries.

Notes

Can be stored in the fridge for up to 4 days or frozen for longer storage.
