Ingredients
  

Pumpkin Filling
  • 4 oz cream cheese softened
  • 0.25 cup pumpkin purée
  • 3 tbsp powdered sugar
  • 1 tsp pumpkin pie spice
  • 0.5 tsp cinnamon
  • 0.5 tsp vanilla extract
Roll-Ups
  • 10 slices white sandwich bread crusts removed
  • 2 eggs beaten
  • 0.25 cup milk
  • 1 tsp cinnamon
  • 0.5 tsp pumpkin pie spice
  • 1 tbsp sugar
  • 1 tbsp butter for cooking
Cinnamon-Sugar Coating
  • 0.25 cup sugar
  • 1 tsp cinnamon

Method
 

  1. Mix cream cheese, pumpkin, powdered sugar, spices, and vanilla until smooth.
  2. Trim crusts and flatten bread slices.
  3. Spread filling and roll each slice tightly.
  4. Whisk eggs, milk, sugar, cinnamon, and spice.
  5. Dip rolls lightly in custard and cook in butter until golden.
  6. Roll in cinnamon sugar and serve warm.

Notes

For extra crispy roll-ups, cook in a lightly greased air fryer for 4–5 minutes.
