- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, melt butter over medium heat. Sauté onions, carrots, and garlic for 4–5 minutes until softened.
- Sprinkle flour over vegetables, stirring constantly for 1–2 minutes. Gradually whisk in chicken broth until smooth.
- Stir in heavy cream, Parmesan cheese, thyme, salt, and pepper. Cook for 3–4 minutes until sauce thickens.
- Add cooked chicken, pasta, and peas to the sauce. Stir gently to combine and heat through for 2–3 minutes.
- Serve immediately, garnished with fresh parsley if desired.
Notes
For extra flavor, use rotisserie chicken or add garlic powder and paprika.
