  • 2 cups cooked chicken shredded or diced
  • 8 oz pasta any type
  • 1 cup frozen peas
  • 1 cup diced carrots
  • 0.5 cup chopped onion
  • 2 cloves garlic minced
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 1 tsp dried thyme
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, melt butter over medium heat. Sauté onions, carrots, and garlic for 4–5 minutes until softened.
  3. Sprinkle flour over vegetables, stirring constantly for 1–2 minutes. Gradually whisk in chicken broth until smooth.
  4. Stir in heavy cream, Parmesan cheese, thyme, salt, and pepper. Cook for 3–4 minutes until sauce thickens.
  5. Add cooked chicken, pasta, and peas to the sauce. Stir gently to combine and heat through for 2–3 minutes.
  6. Serve immediately, garnished with fresh parsley if desired.

Notes

For extra flavor, use rotisserie chicken or add garlic powder and paprika.
