Ingredients
  

Oatmeal Base
  • 1 cup rolled oats
  • 2 cups milk or plant-based milk
  • 0.5 cup pumpkin puree
  • 1 tbsp maple syrup or honey
  • 0.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.25 tsp pumpkin pie spice optional
  • 0.25 tsp salt
  • 0.5 tsp vanilla extract
Optional Toppings
  • 2 tbsp chopped pecans
  • 2 tbsp pumpkin seeds
  • 1 banana sliced

Method
 

  1. Heat milk in a saucepan over medium heat until gently simmering.
  2. Add rolled oats and salt, cooking for 3–4 minutes while stirring occasionally.
  3. Stir in pumpkin puree, cinnamon, nutmeg, and pumpkin pie spice.
  4. Add maple syrup and vanilla extract, mixing well.
  5. Continue cooking until oatmeal becomes thick and creamy.
  6. Add extra milk if needed to adjust consistency.
  7. Serve warm with your favorite toppings.

Notes

For extra creaminess use oat milk or coconut milk.
