Chicken
  • 3-4 lbs chicken thighs or drumsticks
Orange Glaze
  • 2 large oranges zested and juiced
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp thyme fresh or dried
Optional Garnish
  • orange slices for roasting
  • fresh thyme for serving

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Whisk together orange juice, orange zest, garlic, ginger, honey, soy sauce, olive oil, thyme, salt, and pepper.
  3. Place chicken in baking dish and coat with orange mixture.
  4. Add optional orange slices around the chicken.
  5. Roast for 35–45 minutes, basting halfway through.
  6. Broil for 2–3 minutes for caramelization.
  7. Serve with extra sauce and fresh thyme.

Notes

For deeper flavor, marinate chicken in the orange mixture for 30 minutes before roasting.
