Ingredients
  

  • 3 sweet potatoes medium
  • 2 tbsp olive oil
  • 0.25 cup feta cheese crumbled
  • 3 tbsp honey

Equipment

  • Parchment paper
  • Mixing bowl

Method
 

  1. Slice sweet potatoes and toss with oil and seasoning.
  2. Roast at 425°F for 20–25 minutes, flipping halfway.
  3. Drizzle with honey and top with feta before serving.

Notes

Add feta after roasting to preserve texture.
