Method
- Heat olive oil and butter in a skillet over medium heat. Add sliced onions and cook 10–12 minutes until caramelized.
- Add mushrooms and cook 5–7 minutes until browned.
- Stir in garlic, salt, pepper, and thyme and cook 1 minute.
- Add spinach in batches and sauté until wilted and tender.
- Finish with a squeeze of lemon and garnish with parsley if desired.
Notes
Great as a topping for bowls, pasta, or toast.
