  • 1.5 cups almond flour
  • 0.5 cup rolled oats
  • 0.5 cup coconut sugar or monk fruit sweetener
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.25 cup unsalted butter or coconut oil softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup sugar-free or dark chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.
  2. Mix almond flour, oats, sweetener, baking soda, and salt in a bowl.
  3. Whisk butter (or coconut oil), eggs, and vanilla extract in a separate bowl.
  4. Combine wet and dry ingredients to form thick dough.
  5. Fold in chocolate chips.
  6. Press dough evenly into the pie dish.
  7. Bake 20–25 minutes until edges are golden and center is set but soft.
  8. Cool 10 minutes before slicing and serving.

Notes

For extra gooey pie, underbake slightly by 2–3 minutes.
