Ingredients
  

Sheet Pan Ingredients
  • 1.5 lb boneless skinless chicken breasts
  • 3 medium sweet potatoes peeled and cubed
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 2 tbsp lemon juice fresh
  • 1.5 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
Tzatziki Sauce
  • 1 cup plain Greek yogurt
  • 0.5 cup cucumber grated and drained
  • 1 clove garlic minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill chopped
  • 0.25 tsp salt

Method
 

  1. Preheat oven to 425°F (220°C) and line a sheet pan.
  2. Toss sweet potatoes with olive oil, garlic, and seasonings; spread on pan.
  3. Season chicken and place on the sheet pan.
  4. Roast until chicken is cooked through and sweet potatoes are tender.
  5. Mix tzatziki ingredients in a bowl and chill.
  6. Serve chicken and sweet potatoes topped with tzatziki.

Notes

Tzatziki can be made up to 2 days ahead.
