Ingredients
  

Chicken
  • 4 chicken thighs or breasts
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 lemon juiced
Vegetables
  • 3 cups baby potatoes halved
  • 2 cups green beans trimmed
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 cloves garlic minced
Finishing
  • 0.25 cup parmesan cheese optional
  • fresh parsley for garnish

Method
 

  1. Preheat oven to 400°F (200°C) and line a sheet pan with parchment.
  2. Season potatoes with olive oil, salt, pepper, and Italian seasoning. Roast for 15 minutes.
  3. Season chicken with olive oil, garlic powder, paprika, Italian seasoning, salt, pepper, and lemon juice.
  4. Push potatoes aside and add chicken to the sheet pan.
  5. Toss green beans with olive oil, salt, pepper, and minced garlic. Add to pan.
  6. Roast everything for 20–25 minutes until chicken is cooked and potatoes are tender.
  7. Sprinkle with parmesan, garnish with parsley, and serve.

Notes

For extra crispiness, broil the sheet pan for 2–3 minutes at the end.
