Ingredients
  

  • 4 bone-in pork chops 1-inch thick
  • 1.5 lb baby potatoes halved
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp fresh rosemary chopped

Method
 

  1. Preheat oven to 400°F (205°C) and line a sheet pan.
  2. Toss potatoes with olive oil, garlic, salt, pepper, paprika, and Italian seasoning.
  3. Roast potatoes for 15 minutes.
  4. Season pork chops with olive oil, salt, pepper, paprika, and rosemary.
  5. Add pork chops to pan and roast 18–22 minutes, flipping halfway.
  6. Broil 2–3 minutes if desired for browning.
  7. Rest pork chops 5 minutes before serving.

Notes

Use a thermometer to ensure pork reaches 145°F for best juiciness.
