- Preheat oven to 400°F (205°C) and line a sheet pan.
- Toss potatoes with olive oil, garlic, salt, pepper, paprika, and Italian seasoning.
- Roast potatoes for 15 minutes.
- Season pork chops with olive oil, salt, pepper, paprika, and rosemary.
- Add pork chops to pan and roast 18–22 minutes, flipping halfway.
- Broil 2–3 minutes if desired for browning.
- Rest pork chops 5 minutes before serving.
Notes
Use a thermometer to ensure pork reaches 145°F for best juiciness.
