Main
  • 4 salmon fillets 6 oz each
  • 1.5 lbs baby potatoes halved
  • 1 cup broccoli florets
  • 1 cup carrots sliced
Seasoning
  • 4 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 lemon zested and juiced

Method
 

  1. Roast seasoned potatoes at 400°F for 20 minutes.
  2. Add vegetables and salmon, season, and return to oven.
  3. Roast until salmon is flaky and vegetables are tender.

Notes

Add salmon after potatoes begin roasting for even cooking.
