Ingredients
  

Sausage and Vegetables
  • 14 oz smoked sausage sliced
  • 2 lb sweet potatoes peeled and cubed
  • 2 tbsp olive oil
  • 0.75 tsp salt
  • 0.5 tsp black pepper
Honey Garlic Sauce
  • 0.33 cup honey
  • 0.25 cup soy sauce low sodium preferred
  • 3 cloves garlic minced
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 0.25 tsp red pepper flakes optional

Method
 

  1. Preheat oven to 400°F (205°C) and line a sheet pan.
  2. Toss sweet potatoes with olive oil, salt, and pepper. Roast for 20 minutes.
  3. Add sausage to the pan.
  4. Whisk honey garlic sauce ingredients together.
  5. Pour sauce over pan contents, toss gently, and roast 15–20 minutes more.
  6. Garnish and serve hot.

Notes

For extra caramelization, broil for 2–3 minutes at the end while watching closely.
