Ingredients
  

Baked Potatoes
  • 4 russet potatoes large
  • 2 tbsp olive oil
  • 1 tsp salt
Shepherd’s Pie Filling
  • 1 lb ground beef or lamb
  • 1 onion diced
  • 2 carrots diced
  • 2 cloves garlic minced
  • 1 cup peas frozen
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 cup beef broth
  • 1 tsp thyme
Mashed Potato Topping
  • 4 tbsp butter
  • 0.25 cup milk
  • 0.5 tsp black pepper

Equipment

  • Large skillet
  • Mixing bowl
  • Potato masher

Method
 

  1. Bake potatoes at 400°F until tender, about 50–60 minutes.
  2. Brown meat in a skillet, then add onion and carrots and cook until softened.
  3. Stir in garlic, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  4. Add beef broth and simmer until thickened, then fold in peas.
  5. Scoop potato flesh into a bowl and mash with butter, milk, salt, and pepper.
  6. Fill potato skins with meat mixture and top with mashed potatoes.
  7. Bake assembled potatoes for 15–20 minutes until heated through.

Notes

Broil for 2–3 minutes at the end for a golden mashed potato topping.
