Ingredients
  

Salad
  • 3 Persian cucumbers finely diced
  • 3 medium tomatoes finely diced
  • 0.33 cup red onion finely chopped
  • 2 tbsp lemon juice fresh
  • 2 tbsp olive oil extra virgin
  • 1 tbsp dried mint
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Wash and dry vegetables thoroughly.
  2. Finely dice cucumbers and tomatoes into small even cubes.
  3. Finely chop red onion.
  4. Combine vegetables in a mixing bowl.
  5. Add lemon juice, olive oil, mint, salt, and pepper.
  6. Toss gently until evenly coated.
  7. Let rest 10–15 minutes before serving.

Notes

Best served fresh. Adjust lemon and salt to taste.
