Ingredients
  

Shrimp & Veggies
  • 1.5 lbs large shrimp peeled & deveined
  • 4 cups broccoli florets
  • 4 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp red pepper flakes optional
Garlic Butter Sauce
  • 4 tbsp butter melted
  • 4 cloves garlic minced
  • 1 tbsp lemon juice fresh
  • 1 tsp Italian seasoning
  • 1 tbsp fresh parsley chopped
  • lemon wedges for serving

Equipment

  • Heavy-duty aluminum foil
  • Mixing bowl
  • Baking sheet

Method
 

  1. Tear 4 large pieces of heavy-duty foil and spray lightly with oil.
  2. Divide shrimp and broccoli among foil sheets and drizzle with olive oil.
  3. Season with salt, pepper, and red pepper flakes.
  4. Mix melted butter with garlic, lemon juice, Italian seasoning, and parsley.
  5. Spoon garlic butter sauce over each foil packet.
  6. Seal foil tightly to form packets.
  7. Bake at 425°F (220°C) for 12–14 minutes or grill 10–12 minutes.
  8. Open carefully and serve with fresh lemon wedges.

Notes

Frozen shrimp works if thawed. Add baby potatoes or cooked rice to make each pack a full meal.
