Ingredients
  

Salad
  • 1 lb cooked shrimp peeled and deveined
  • 2 avocados diced
  • 1.5 cups cherry tomatoes halved
  • 1 cup cucumber chopped
  • 0.25 cup red onion finely diced
  • 2 tbsp fresh cilantro chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lime juice
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper

Equipment

  • Mixing bowls
  • Baking sheet

  • Hand mixer or stand mixer

Method
 

  1. Prepare and chop all ingredients evenly.
  2. Combine shrimp, avocado, tomatoes, cucumber, onion, and herbs.
  3. Whisk olive oil, lime juice, salt, and pepper.
  4. Pour dressing over salad and toss gently.
  5. Serve immediately for best freshness.

Notes

Add avocado just before serving to prevent browning.
