Ingredients
  

Seafood Mixture
  • 1 cup cooked shrimp chopped
  • 1 cup lump crab meat fresh or canned
  • 0.33 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Old Bay seasoning
  • 2 green onions sliced
  • 1 tbsp parsley chopped
  • 0.5 tsp garlic powder
  • salt and pepper to taste
Assembly
  • 4-6 slices French bread or English muffins toasted
  • 4-6 slices cheddar or Swiss cheese

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Chop cooked shrimp into bite-sized pieces.
  2. Combine shrimp, crab, mayonnaise, lemon juice, Old Bay, green onions, parsley, garlic powder, salt, and pepper.
  3. Preheat oven to broil or 450°F (230°C).
  4. Lightly toast bread or English muffins.
  5. Spread seafood mixture over bread.
  6. Top each melt with a slice of cheese.
  7. Broil 4–6 minutes until cheese is bubbly and golden.
  8. Serve warm with parsley or lemon zest.

Notes

For extra crisp edges, toast the bread before adding the mixture.
