Ingredients
  

  • 4 cups watermelon cubed
  • 1 English cucumber sliced
  • 0.75 cup feta cheese crumbled
  • 2 tbsp fresh mint chopped
  • 1 tbsp olive oil
  • 2 tsp lime juice

Method
 

  1. Cube watermelon and place in bowl.
  2. Slice cucumber and add to bowl.
  3. Add crumbled feta and chopped mint.
  4. Drizzle olive oil and lime juice over salad.
  5. Season lightly and toss gently.
  6. Chill briefly before serving.

Notes

Best served fresh. Add feta just before serving for optimal texture.
