Ingredients
  

Soup Base
  • 1.5 lbs chicken breasts
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 1 jalapeño diced, optional
  • 14.5 oz diced tomatoes
  • 10 oz Rotel
  • 15 oz black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 4 cups chicken broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 0.5 tsp oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 lime juiced
Toppings
  • tortilla strips

Equipment

Method
 

  1. Add chicken, vegetables, beans, tomatoes, broth, and spices to slow cooker.
  2. Cook on LOW 6–7 hours or HIGH 3–4 hours.
  3. Shred chicken and return to slow cooker.
  4. Stir in lime juice and adjust seasoning.
  5. Serve hot with tortilla strips and desired toppings.

Notes

For a creamy version, add cream cheese at the end.
