Method
- Place beef cubes and halved potatoes in slow cooker.
- Combine garlic, melted butter, salt, pepper, paprika, and thyme. Pour over beef and potatoes.
- Add beef broth to the slow cooker.
- Cover and cook on low 6–8 hours or high 3–4 hours until beef is tender.
- Transfer to serving platter and spoon sauce over top.
- Garnish with chopped parsley and serve.
Notes
Optional: Sear beef beforehand for deeper flavor. Add extra vegetables for variety.
