Ingredients
  

Beef & Potatoes
  • 2 lbs beef chuck cut into 1-inch cubes
  • 1.5 lbs baby potatoes halved
  • 4 cloves garlic minced
  • 4 tbsp unsalted butter melted
  • 1 cup beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme or 2 tsp fresh
  • 1 tsp paprika
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Place beef cubes and halved potatoes in slow cooker.
  2. Combine garlic, melted butter, salt, pepper, paprika, and thyme. Pour over beef and potatoes.
  3. Add beef broth to the slow cooker.
  4. Cover and cook on low 6–8 hours or high 3–4 hours until beef is tender.
  5. Transfer to serving platter and spoon sauce over top.
  6. Garnish with chopped parsley and serve.

Notes

Optional: Sear beef beforehand for deeper flavor. Add extra vegetables for variety.
