Ingredients
  

Beef and Potatoes
  • 2 lbs beef chuck cut into 1-inch cubes
  • 1.5 lbs baby potatoes quartered
  • 4 tbsp unsalted butter cut into pieces
  • 5 cloves garlic minced
  • 1 onion finely chopped
  • 1 cup beef broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 0.5 tsp salt adjust to taste
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Place beef cubes, potatoes, and onion in the slow cooker.
  2. Add garlic, thyme, paprika, salt, and black pepper. Toss gently to combine.
  3. Pour beef broth over mixture and top with butter pieces.
  4. Cover and cook on LOW for 7–8 hours or HIGH for 3–4 hours until beef and potatoes are tender.
  5. Remove lid, stir gently, adjust seasoning, and garnish with fresh parsley.
  6. Serve hot as a main dish.

Notes

For thicker sauce, remove lid for last 30 minutes of cooking.
