- Heat olive oil in a skillet over medium-high heat. Season beef with salt and pepper, cook until browned, breaking into small pieces.
- Place a tortilla in a separate skillet over medium heat. Sprinkle cheese over half the tortilla.
- Add beef, onions, pickles, lettuce, and drizzle ketchup, mayonnaise, and mustard. Fold tortilla and cook 2–3 minutes per side until golden and cheese melts.
- Repeat with remaining ingredients. Slice in half and serve hot.
Notes
Press gently with spatula while cooking for crispier quesadilla edges.
