- Heat 1 tablespoon olive oil in a skillet. Add diced sweet potatoes and cook 8–10 minutes until tender and lightly browned.
- Move sweet potatoes aside. Add remaining olive oil and sliced sausage; cook 4–5 minutes until browned.
- Add onions, garlic, and sliced bell peppers. Cook 4–5 minutes until softened.
- Season with paprika, salt, pepper, and chili flakes if using.
- Cook 2–3 more minutes until everything is caramelized and well combined.
- Serve hot, garnished with parsley.
Notes
Add spinach or kale for extra greens; use Cajun seasoning for a smoky kick.
