  • 14 oz smoked sausage sliced
  • 2 sweet potatoes peeled and diced small
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 onion sliced
  • 3 cloves garlic minced
Seasoning & Oil
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp chili flakes optional
  • fresh parsley for garnish

Method
 

  1. Heat 1 tablespoon olive oil in a skillet. Add diced sweet potatoes and cook 8–10 minutes until tender and lightly browned.
  2. Move sweet potatoes aside. Add remaining olive oil and sliced sausage; cook 4–5 minutes until browned.
  3. Add onions, garlic, and sliced bell peppers. Cook 4–5 minutes until softened.
  4. Season with paprika, salt, pepper, and chili flakes if using.
  5. Cook 2–3 more minutes until everything is caramelized and well combined.
  6. Serve hot, garnished with parsley.

Notes

Add spinach or kale for extra greens; use Cajun seasoning for a smoky kick.
