Smothered Pork Chop and Scalloped Potato Casserole

Ingredients
  

Casserole
  • 4 bone-in pork chops 1 inch thick
  • 4 tbsp olive oil or butter
  • salt and black pepper to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 onion thinly sliced
  • 4 cups sliced potatoes
  • 2 cups shredded cheese cheddar or Gruyère
  • 2 cups milk
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 tsp dried thyme

Method
 

  1. Preheat oven to 375°F (190°C) and grease casserole dish.
  2. Season pork chops with salt, pepper, garlic powder, and paprika.
  3. Sear pork chops 2–3 minutes per side until golden; remove from skillet.
  4. Make cheese sauce by melting butter, whisking in flour, gradually adding milk, then cheese and thyme.
  5. Layer half of potatoes, onions, and sauce in casserole dish; repeat layers.
  6. Place pork chops on top and spoon extra sauce over them.
  7. Cover with foil and bake 35 minutes; remove foil and bake 15–20 minutes more until golden and tender.

Notes

Serve hot, garnish with parsley for a fresh finish.
