  • 1.5 cups almond flour fine
  • 4 oz cream cheese softened
  • 0.25 cup unsalted butter softened
  • 0.75 cup powdered erythritol
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.5 tsp baking powder
  • 0.25 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheet.
  2. Beat cream cheese and butter until smooth.
  3. Add sweetener, egg, and vanilla; mix well.

  5. Scoop dough, flatten slightly, and bake 10–12 minutes.

Notes

Do not overbake—cookies should remain pale and soft.
