Ingredients
  

Peach Filling
  • 3 cups fresh peaches peeled and diced
  • 0.5 cup brown sugar
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 2 tbsp unsalted butter
Egg Rolls
  • 12 egg roll wrappers
  • vegetable oil for frying

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Cook peaches, sugar, spices, lemon juice, butter, vanilla, and cornstarch until thickened.
  2. Cool filling slightly before assembling.
  3. Place filling in egg roll wrappers and roll tightly, sealing edges.
  4. Heat oil to 350°F (175°C).
  5. Fry egg rolls until golden brown, turning as needed.
  6. Drain on paper towels and serve warm.

Notes

Serve immediately for best texture.
