Ingredients
  

Breakfast Bowl
  • 4 eggs large
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels fresh or canned
  • 0.5 cup bell peppers diced
  • 0.5 cup cherry tomatoes or pico de gallo
  • 1 avocado sliced
  • 0.25 cup shredded cheese optional
  • 1 tbsp olive oil
  • 1 tsp lime juice
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp cilantro chopped, for garnish

  • Non-stick skillet
  • Mixing bowl
  • Spatula

Method
 

  1. Dice bell peppers and tomatoes, slice avocado, rinse black beans.
  2. Scramble eggs in a non-stick skillet with olive oil, season with salt and pepper.
  3. Sauté corn and bell peppers until tender.
  4. Assemble bowl: layer eggs, beans, corn, peppers, tomatoes, avocado, and cheese.
  5. Drizzle lime juice and sprinkle cilantro before serving.

Notes

Can customize with protein or extra vegetables.
