- Rinse quinoa and cook with water or broth for 15 minutes. Let sit and fluff.
- Whisk olive oil, lime juice, garlic, cumin, chili powder, salt, and pepper.
- Combine cooled quinoa, beans, corn, bell pepper, and onion.
- Toss with dressing.
- Fold in avocado and cilantro. Chill before serving.
