Ingredients
  

  • 1 cup quinoa uncooked
  • 2 cups water or vegetable broth
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper diced
  • 1 avocado diced
  • 0.25 cup red onion chopped
  • 0.25 cup fresh cilantro chopped
  • 3 tbsp olive oil
  • 2 tbsp lime juice fresh
  • 1 clove garlic minced
  • 0.5 tsp ground cumin
  • 0.5 tsp chili powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Rinse quinoa and cook with water or broth for 15 minutes. Let sit and fluff.
  2. Whisk olive oil, lime juice, garlic, cumin, chili powder, salt, and pepper.
  3. Combine cooled quinoa, beans, corn, bell pepper, and onion.
  4. Toss with dressing.
  5. Fold in avocado and cilantro. Chill before serving.

Notes

Add avocado just before serving if meal prepping.
