- Preheat oven to 400°F (200°C). Pat chicken thighs dry and season with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear chicken skin-side down for 5–7 minutes until golden and crispy. Flip and cook 2 minutes more.
- In a bowl, whisk together soy sauce, garlic, honey, brown sugar, rice vinegar, and sesame oil.
- Pour sauce into skillet around the chicken and transfer to oven.
- Bake for 20–25 minutes until chicken reaches 165°F (74°C).
- Rest 5 minutes, garnish with sesame seeds and green onions, and serve.
Notes
For thicker sauce, simmer pan sauce on stovetop for 2–3 minutes after removing chicken.
