Ingredients
  

Pasta
  • 12 oz spaghetti
  • 6 slices bacon chopped
  • 2 eggs large
  • 1 egg yolk
  • 1 cup Parmesan cheese freshly grated

Equipment

  • Large skillet
  • Mixing bowl
  • Tongs

Method
 

  1. Cook spaghetti until al dente and reserve pasta water.
  2. Cook bacon until crispy.
  3. Whisk eggs, yolk, Parmesan, and pepper.
  4. Toss hot pasta with bacon and egg mixture off heat.
  5. Add pasta water as needed and serve immediately.

Notes

Remove pan from heat before adding eggs to prevent scrambling.
