Ingredients
  

Pasta
  • 12 oz spaghetti
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 0.5 cup sun-dried tomatoes sliced
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese grated
  • 3 cups fresh spinach

Equipment

  • Large pot
  • Skillet

  • Wooden spoon

Method
 

  1. Cook spaghetti until al dente and reserve pasta water.
  2. Sauté garlic and sun-dried tomatoes in olive oil.
  3. Add cream and simmer until slightly thickened.
  4. Stir in Parmesan until smooth.
  5. Add spinach and cook until wilted.
  6. Toss pasta with sauce and adjust consistency with pasta water.

Notes

Use freshly grated Parmesan for best texture.
