Method
- Spiralize or thinly slice the cucumbers and place in a large bowl.
- Add minced garlic and sliced scallions to the cucumbers.
- In a small bowl, whisk together gochugaru, rice vinegar, soy sauce, sugar, sesame oil, and salt until smooth.
- Pour the dressing over the cucumbers and toss gently to coat.
- Sprinkle toasted sesame seeds on top and serve immediately or chill for 10–15 minutes.
Notes
Best eaten fresh. Adjust spice level to taste.
